This is a superb and refreshing summer salad.
Once you start collecting tomatoes from your garden and not knowing what to do with so many of them, start adding them to all your salads. Today we are going to make this simple easy and delicious caprese salad.
The importance of using the highest quality ingredients is key in this salad since none of them will be cooked and we want to indulge our taste buds.
But first did you know that tomatoes are extremely important to eat particularly in the Summer?
Tomatoes have the ability to reduce skin burn from the sun, it is high in lycopene a high anti-oxidant, which protects the skin from ultra-violet (UV) rays. that's why in the Summer we will crave these exotic fruits from South America.
Tomatoes are rich in Vitamin C, B-complex and good source of potassium.
And like all fruits and veggies with these yellow to orange and red hues they are an antioxidant that will protect you from many forms of cancer such as colon, skin, prostate, lung, breast cancer and many others.
For this recipe I have taken a trip to La montanita co-op in Knob Hill Albuquerque, NM where I knew i could find:
Preparation: (2 people) 5 minutes
Slice as many tomatoes as you will have mozzarella. Drain mozzarella from water and slice it.
Alternate layers between the tomatoes, mozzarella, and basil.
Or arrange slices of tomatoes on a plate and add cherry mozzarella on top. (as shown in picture)
Garnish with fresh Basil
Drizzle olive oil and balsamic vinegar.
Salt and pepper to taste.

Serving 4 - Preparation 15 min
Mix apples and berries, lemon juice, grated ginger, cinnamon, cardamon, and sugar in a bowl or directly in your cooking dish so all fruits are coated. And spread into your cooking dish.
In a blender or food processor or bowl mixer; mix oats, almond flour. add cut up butter into small squares or liquid ghee. Mix until butter/ghee is homogenized and texture is crumbly.
Spread the dry mixer on top of the fruits all over the surface to cover them.
Cook in the oven for about 45 min (at 7,000 ft Altitude cook an extra 15 min)
For more decadence get fresh organic whipping cream, whip it with:
1/2 tsp of organics sugar or maple syrup and
1tsp of vanilla extract
Whip until you can stand a spoon in your bowl
Benefits: Apples help soothe digestion.
Oats and sweetness of fruits nurture Vata and Pitta.
Cardamon, cinnamon, and ginger are heating, which helps feeling warm in the winter.
Ghee/butter is a healthy fat for your brain and will fuel energy in your body leaving you feeling satisfied and full.
